Ingredients
For the Crust:
- 1-½ | cups graham cracker crumbs
- ⅓ | cup unsalted butter (melted)
- 2 | tablespoons granulated sugar
For the Cheesecake Filling:
- 4 | (8 oz each) blocks cream cheese (softened)
- 1 | cup granulated sugar
- 1 | teaspoon vanilla extract
- 3 | large eggs
- 1 | cup sour cream
- 2 | tablespoons all-purpose flour (for stability)
Instructions
Prepare the crust:
- Preheat the oven to 325°F (160°C). Mix graham cracker crumbs, melted butter, and sugar. Press into a 9-inch spring form pan and bake for 10 minutes. Let it cool.
Make the filling:
- Beat cream cheese and sugar until smooth. Add vanilla, then eggs (one at a time). Fold in sour cream and flour until combined.
Assemble and bake:
- Pour filling over cooled crust. Bake for 50-60 minutes at 325°F (160°C) until the center jiggles slightly.
Cool and chill:
- Turn off the oven, leave the door slightly open, and cool for 1 hour. Refrigerate for 4-6 hours or overnight.
Serve:
- Run a knife around the edges, release from the spring form, slice, and serve with toppings like berries, whipped cream, or caramel.
Notes
To prevent cracks, bake the cheesecake in a water bath (wrap the pan in foil and place it in a larger pan filled with hot water).
