Ingredients
⅔ cup | Graham cracker crumbs
2 tablespoons | Unsalted butter
1 tablespoon | Granulated sugar
8 ounces | Softened full-fat cream cheese
¼ cup | Full-fat sour cream
½ tablespoon | Vanilla extract
1 tablespoon | Lemon juice
1 large | Egg
Directions
- Preheat the oven to 350 degrees and arrange a 48-count muffin pan with baking liners for shaping Mini Cheesecakes.
- Spray the pan with non-stick spray and add mini cake wraps to it.
- Make the crust by combining and mixing the graham crackers and melted butter well in a bowl.
- Take another bowl, add cream cheese and sugar to it, and beat well using an electric mixer.
- Pour eggs, vanilla extract, lemon juice, and all the remaining ingredients into the cream cheese mixture, and again beat for 2 to 5 minutes.
- Now make the layers of both crust and cream cheese mixture in a muffin.
- Set this muffin in the oven for a maximum of 15 minutes.
- Chill the prepared Mini Cheesecakes in a freezer to cooll and wait for an hour.
- Finally, the mini cakes are ready to serve.
