Among cheesecakes, Bailey’s Irish Cream Cheesecake recipe is unique for its extremely velvety filling and rich flavors. The chocolate ganache adds more luxury to this simple recipe. It covers the tastes of vanilla, Irish whiskey, and chocolate with Irish cream.

Ingredients

  • For Crust Preparation
  • 1 | cup graham cracker crumbs

  • 3 | tablespoons white sugar

  • 3 | tablespoons melted butter

  • For Cheesecake Filling
  • 3 | packages of cream cheese

  • 4 | large eggs

  • 1 | cup white sugar

  • 1 | cup sour cream

  • | cup Irish cream liqueur

  • 2 | teaspoons vanilla extract

  • For Chocolate Ganache
  • 6 | oz semi-sweet chocolate

  • 1/2 | cup heavy cream

  • 1-2 | tablespoons Baileys Irish Cream Liqueur

Directions

  • Start with the crust by mixing graham cracker crumbs, melted butter, and sugar in a bowl. Pour the mixture into a 9-inch greased baking pan.
  • Set the oven to 350 degrees and preheat it for 15 minutes. Bake the crust at this temperature for 8 to 10 minutes until it turns golden.
  • For the cheese cream filling, take a mixing bowl and add vanilla, sugar, and cream cheese. Use an electric mixer at low to medium speed to create a fluffy filling without too many air bubbles.
  • Add sour cream and Irish cream liqueur and mix thoroughly with a mixer. Then, add eggs one by one, using the electric mixer in between for a smooth texture.
  • Pour the filling over the crust and bake for 1 hour. The actual time varies from one oven to another. Turn off the oven when the edges become puffy, and the center is firm (the center filling doesn’t jiggle when you move the pan).
  • Let it cool at room temperature and refrigerate for 8 hours or overnight.
  • For chocolate ganache, use chopped chocolate and simmer the heavy cream on the stove to make it hot without boiling. Pour the hot cream into the chopped chocolate bowl and let the chocolate melt. Now, mix it well with a fork and add Baileys Irish Cream Liqueur. Make a smooth topping and then pour it on the chilled cheesecake.
