Ingredients
- For the Crust:
1-½ | cups graham cracker crumbs
⅓ | cup unsalted butter (melted)
2 | tablespoons granulated sugar
- For the Cheesecake Filling:
4 | (8 oz each) blocks cream cheese (softened)
1 | cup granulated sugar
1 | teaspoon vanilla extract
3 | large eggs
1 | cup sour cream
2 | tablespoons all-purpose flour (for stability)
Directions
- Prepare the crust:
- Preheat the oven to 325°F (160°C). Mix graham cracker crumbs, melted butter, and sugar. Press into a 9-inch spring form pan and bake for 10 minutes. Let it cool.
- Make the filling:
- Beat cream cheese and sugar until smooth. Add vanilla, then eggs (one at a time). Fold in sour cream and flour until combined.
- Assemble and bake:
- Pour filling over cooled crust. Bake for 50-60 minutes at 325°F (160°C) until the center jiggles slightly.
- Cool and chill:
- Turn off the oven, leave the door slightly open, and cool for 1 hour. Refrigerate for 4-6 hours or overnight.
- Serve:
- Run a knife around the edges, release from the spring form, slice, and serve with toppings like berries, whipped cream, or caramel.
Bonus Tips
- Always use room-temperature ingredients for a smoother batter.
To prevent cracks, bake the cheesecake in a water bath (wrap the pan in foil and place it in a larger pan filled with hot water).
